When I went to Austin, Texas last year to speak at BlogHer Food, something amazingly awesome happened… I was invited to a mango party!

So the mango party was a blast. It was put on by the US National Mango Board and I went with my friend Whitney (aka Eco Vegan Gal) and we had mango nibbles and mango cocktails.
Then, a few weeks later, an even more exciting thing happened. The Mango Board asked me to contribute to a new cookbook they were putting out. And – they were going to send me 5 mangoes in the mail to test some recipes.
Heather’s dream come true… better than Cinderella’s glass slippers.
okokokok… breathe… That’s basically what went through my mind when I got that email. I may or may not have mentioned to you before, but I’m kind of in love with fruit… and specifically mangoes. It may border on an addiction, but I don’t really care.
So, needless to say, being asked to be part of the Mango Board’s cookbook was like winning an Oscar for me. It was like they said, ‘yes, Heather, we know your love for mangoes is unparalleled in the world, and we would like to recognize and reward that love by sending you 5 mangoes in the mail and having you create a recipe to show others how amazingly wonderously fantastic mangoes are.’
I shared a mango salsa recipe that I made with one of the mangoes they sent me.
Let me tell ya, it was HARD to narrow my mango fetish down to one particular recipe, but eventually I decided on mango sushi. This is something a friend and I have been doing over the last couple of years, using maple syrup in the rice instead of vinegar, and filling them with various fruits.
As I got making my mango sushi, I was inspired to up my game, and wound up making a mango dragon roll (this is where the mango slices are placed on top of an inside-out roll). And then, because I just couldn’t stop myself once I got started, I added toasted coconut (to make it look more dragon-like) and a spiced chocolate drizzle (cause that’s just delicious).
