Phil and I spent the day on a train yesterday, and seeing as we only had 15 minutes to change trains I packed our food for the day. It was basically the contents remaining in our fridge turned into lunch and dinner.
Lunch was lettuce wraps with hummus, zucchini, cucumber, green pepper and carrot sticks. It was really tasty, and light enough that we didn’t have any trouble digesting it while we sat for the next 8 hours.
Dinner was some steamed beet, sweet potato, mushrooms and broccoli dressing with a drizzle of tamari and toasted sesame oil. Delicious, and Phil dove right in. It was tough for him to wait long enough to take this picture 🙂
We also had some apples with us, but sitting all day on a train doesn’t work up much of an appetite so we had them for breakfast this morning instead.
