I was so happy when I heard that my dear friend, Jill Nussinow, said that she was writing a new cookbook. Jill goes by the name The Veggie Queen, which is totally apt!
Jill is a Registered Dietitian, and is a wonderful chef who does full justice to the amazingly healthy array of whole plant foods out there.

And I was even more excited when she asked me to contribute recipes to the new book!
I wound up contributing a few recipes, one of my favorites of which is my Parsley Pistachio Pesto.
The book is called Nutrition CHAMPS, and the subtitle is ‘The Veggie Queen’s Guide to Eating & Cooking for Optimum Health, Happiness, Energy & Vitality.’
Who wouldn’t want in on that??
If you’re wondering what the ‘CHAMPS’ bit is about, it stands for:
- Cruciferous Vegetables
- Herbs and Spices
- Alliums
- Mushrooms
- Pulses (beans, peas and lentils)
- Seeds and Nuts
These are nutritional-powerhouse food groups, and Jill gives a description of each and why they’re so amazingly nourishing.
Jill has very neatly organized the book into those sections, so that you can easily find ideas to get the nutritional benefits of each!
The book is full of amazing recipe contributions from fabulous vegan chefs like Dreena Burton, Christy Morgan, Jaime K – and me!
