This creamy coleslaw would be great as a side to a meal, or even as a dish on its own! The creamy dressing features avocado, which has a very powerful antioxidant (glutathione) and helps to lower blood cholesterol levels.

Ingredients
- ½ head of green or purple cabbage, shredded
- 2 large carrots, grated
- 1 avocado, mashed
- 1 tsp stone ground mustard
- 1 Tbsp apple cider vinegar
- 1 tsp sea salt, or to taste
- 3 Tbsp water, more or less to creamy consistency
- Fresh parsley, optional, for garnish
Directions:
- Shred and grate cabbage and carrots by hand or in a food processor, and toss together in a large bowl.
- Mix together the dressing by mashing the avocado and whisking in the rest of the ingredients (aside from parsley) to the consistency of your liking. You can also do this in a blender for a smoother texture.
- Toss the dressing into the cabbage & carrots, arrange on the plate and garnish with a sprig of fresh parsley.
- Note: This salad tastes best fresh. Make just enough for what you are serving, as it doesn’t taste as nice as leftovers.
