Yogurt is a tough ingredient to substitute in healthy vegan recipes – here I use coconut milk with lemon juice for the creamy tang.
Cucumber Salad Recipe

Ingredients
- ½ can coconut milk (approx 200 mL)
- 2 cloves garlic, pressed
- 1 lemon, zested and juiced
- 1 Tbsp dill (fresh or dried)
- Pinch black pepper
- ½ Tbsp onion powder (or a small amount of grated onion)
- 1 cucumber, chopped
- 3 stalks celery, chopped (optional)
Directions
- Prepare your dressing in a bowl large enough to hold your salad by mixing all of the ingredients together. Add the vegetables, toss and serve! I told you it was easy.
