Easy Quinoa Salad Recipe

Makes 1 big salad

Ingredients
- 1 cup chopped kale, spinach or lettuce
- 1 cup cooked and chilled quinoa
- 1/2 cup chopped zucchini or cucumber
- 1/2 cup chopped tomatoes
- 1/2 cup chopped avocado or guacamole
- 2 Tbsp tahini dressing
Directions
- Lay the greens on a plate, top with quinoa and veggies and drizzle with dressing.
- If taking this to go, use kale or spinach or take the lettuce on the side to avoid wilting.
