Like many of my recipes, this rice dish is perfect because you can swap in and out what veggies you have on hand. And no, the rice itself isn’t green, but it’s loaded with all sorts of green goodness. Have this as a side to a vegetable or bean dish, or just fill your plate with beautiful green rice.
Green Mexican Rice Recipe

Ingredients
- 1 bunch spinach
- 1 bunch cilantro
- ½ bunch parsley
- 1 jalapeno pepper, seeded
- pinch salt
- ½ can of coconut milk
- 1 tsp olive oil
- 1 onion, diced
- 2 cloves garlic, diced
- 1 cup long-grain brown rice
- handful fresh chives, chopped
Directions
- Put the greens and jalapeno in a blender with the salt, coconut milk and half a cup of water. Blend until smooth.
- Heat a pot to medium-high and saute the onion, then the garlic. Add the rice to the pot and stir until slightly browned. Add the green juice from the blender plus another cup of water, stir and then bring it all up to a boil. Once it has gotten boiling, turn it down to simmer for 45 minutes.
