Matcha Lime Chia Pudding
Prep time:
Makes 3-4 servings

Ingredients
- 1/2 to 1 lime, zest and juice
- 2 tsp matcha green tea powder
- 14 oz can coconut milk
- 1-2 dates, or 1 Tbsp coconut/unrefined sugar, 1 Tbsp maple syrup, 10-15 drops liquid stevia
- 2 Tbsp chia seeds (whole or ground)
Topping Ideas
- Blueberries, blackberries, sliced strawberries
- Coconut whipped cream
- Toasted unsweetened coconut
Directions
- Blend all ingredients in a blender until smooth and no chunks remain.
- Chill in the fridge for about 30 minutes, then serve topped with one or more of the topping ideas.
