I’ve made nori snack rolls before, but I’ve come up with a quicker way to make them with nut butter instead of ground nuts.
These nori snack rolls are the perfect answer for a salty, savory snack that’s healthy instead of relying on chips – and they’re really quick to put together!
Mushroom Ginger Nori Snack Rolls

Ingredients
- 2 sheets nori
- 1-2 Tbsp almond, cashew, peanut or other nut butter
- 1 Tbsp tamari or soy sauce
- 1 mushroom, sliced
- 1 Tbsp pickled ginger
Directions
- Mix together the nut butter and tamari, until smooth.
- Lay a nori roll out on a rolling mat, and spread the nut butter mixture at the far end, leaving enough space to seal the roll.
- Lay a row of mushroom slices and ginger along the near end and roll up.
- Put the rolls in a toaster oven or oven, at 350F for 10-15 min or on toast/broil for 3-4 min.
- Slice the rolls into 3 smaller pieces and serve as a snack or an appetizer.
