Quinoa Sun Dried Tomato Recipe

Ingredients
- 1 cup quinoa
- 1 onion, diced
- 1 tsp olive oil
- 2 zucchini, chopped
- 1 Tbsp dried or fresh basil
- 8 sun-dried tomatoes, soaked and chopped
- 1 Tbsp balsamic vinegar
Directions
- Rinse the quinoa with water, drain, add 2 cups water for every 1 cup quinoa. Sprinkle a bit of sea salt in the water, bring it to a boil for a minute, then turn down to low and simmer for 20-30 minutes. Quinoa is fully cooked when you see the swirl of the grains, with a translucent center, and it is fluffy. Do not stir the quinoa while it is cooking.
- While the quinoa cooks, heat a pan to medium-high, and saute the onion in olive oil. Add the zucchini once the onion has softened. Once the zucchini is soft, stir in the basil and sun-dried tomatoes. Sprinkle the balsamic vinegar over the vegetables and toss to coat them.
- Serve the vegetables over a bed of quinoa.
