Finding a recipe with sauerkraut that doesn’t involve meat is tricky. It mostly gets paired with sausages and other meats, but veggies can be just as wonderful with a helping of sauerkraut, too. This One Pot Meal Recipe uses beets, potatoes and onions flavored with some vinegar and paprika for a bit of a Hungarian feel.
Sauerkraut Topped One Pot Meal Recipe

Ingredients
- 5 small potatoes, scrubbed and cubed
- 1 beet, peeled and cubed
- 1 onion, peeled and chopped
- pinch sea salt
- 3 cloves garlic, pressed
- 1 Tbsp nutritional yeast
- 1/2 tsp paprika
- 1 tsp oregano
- 1 Tbsp apple cider vinegar
- 2 cups lettuce, torn
- 1 cup sprouts
- 3-4 Tbsp sauerkraut
- Sunflower seeds, for garnish, optional
Directions
- Put the potatoes, beet and onion in a pot with a small amount of water and a pinch of sea salt. Cover the pot, turn the heat up to medium-high and bring to a boil, then turn down to simmer for about 30 minutes, or until the potatoes and beets are tender.
- Press the garlic into the pot, and stir it in along with the seasonings and vinegar. Turn off the heat, put the cover back on and leave for a few minutes for the flavors to merge.
- Wash the lettuce, and arrange it on plates. Top it with the cooked vegetables, then the sprouts and the sauerkraut. Sprinkle a few sunflower seeds on top if you like.
