Sweet and Spicy Red Cabbage Recipe

Ingredients
- 1 tsp olive oil
- 1 onion, sliced
- 1 whole star anise
- 1 tsp cinnamon
- pinch ground cloves
- 1 small red cabbage, shredded
- 1 Tbsp maple or brown rice syrup
- 3 Tbsp red wine vinegar (or red wine)
- 2 pears, diced
- ½ cup dried cranberries
- ½ cup chopped almonds
- salt & pepper, to taste
Directions
- Start by sauteing the onion, in the oil, then add the star anise, cinnamon, cloves and cook for about 3 minutes Add the cabbage, sprinkle a bit of salt over it, and cover for a couple of minutes until the cabbage has just started to wilt.
- Pour the vinegar or wine and syrup over the cabbage. Stir in the pears, cranberries and almonds, season with pepper if you wish, and serve.
